A little bit of summer in the middle of winter!!
1 1/2 cups of Bob’s Red Mill Gluten Free 1:1 Baking Flour
1/4 cup almond flour
1 Tbsp baking powder
3 Tbsp sugar
1/4 tsp salt
1 tsp. xanthan gum
1 tsp. lemon zest
10 Tbsp. butter
3/4 cup vanilla yogurt or sour cream
1 cup fresh or frozen blueberries
Raw sugar to sprinkle on top.
Preheat oven to 425 degrees
In a medium bowl combine flour, baking powder, sugar, salt, xanthan gum, and lemon zest. Make well in center.
Add partially melted butter and mix the flour into the butter. Add in yogurt or sour cream and fold in blueberries.
Spray a pie plate with nonstick spray. Spread dough into the pie plate and sprinkle raw sugar over the top.
Cook for 28-30 minutes. Slice into wedges and enjoy!!
